Chicken Mozzarella

I wanted to share a great recipe I got from my
Valentine's Day Swap Cookbook


Here is the recipe


I had to improvise a little since I didn't have exactly what it called for.


I used stewed tomatoes I froze this past summer


The cheese I used was queso jalapeno it's very creamy and melts great


The spices I had on hand were


I cooked chicken breast


I deboned and took the skin off once it was cooked.
I covered and simmered the chicken chuncks, tomatoes, and spices for about 20 minutes.

I then added the cheese and continued to cook it until the cheese melted.

I served this with rice and greenbeans.

I will definately be making this one again.
Maybe next time I can follow the recipe closer.
